Healthy Chocolate Pops!

Last night, I wanted a healthier treat that included chocolate. Was peeling 10 pounds of bananas for my workshops this week (yup, I make a lot of smoothies for my seniors!) and had an idea!


I got a bamboo skewer, stuck it in a banana (so far so good!). Melted a few squares of dark chocolate and dipped the banana in the melted chcolate. Then I wanted some texture. Looked in the cabinet and found my unsweetened shredded coconut! Sprinkled it on and put in freezer for a few hours.

This afternoon, I had my treat and it was delicious!!  Haven't yet mastered the art of putting melted chocolate on smoothly so you don't get a picture of the finished product/


2 bananas, 4 skewers, 4-6 squares dark chocolate, unsweetened shredded coconut (optional)


Break banana in half.

Melt dark chocolate in double boiler

Dip banana halves in chocolate, coating banana evenly

Sprinkle with coconut (optional)

Put on plate and in freezer

Wait a few hours and enjoy!
